Easy Baked Iced Vanilla Doughnuts


This recipe for Easy Baked Iced Vanilla Doughnuts makes a much healthier version of a popular treat.  They may be baked instead of fried but taste just as good.  They’re soft, full of vanilla flavor, and generously topped in a creamy vanilla icing.

I know I just posted my chocolate glazed doughnuts last week, but they were so good, I couldn’t stop there!


These Easy Baked Iced Vanilla Doughnuts are really amazing.  They are soft, fluffy and it might be odd to say, but they are like real doughnuts.


I say that because quite often, homemade baked doughnuts are more like cakes with a hole in the middle, but that’s not the case here.  They are just as good as the doughnuts you get in a bakery, but without being fried so there is a lot less guilt.


The recipe only calls for four tablespoons of butter (including the icing), so they have a fraction of the calories that fried doughnuts have.  I used vanilla in both the batter and the icing so they are full of flavor too.


 


To make the doughnuts, generously grease the pan.  Then fill the doughnut sections 3/4 of the way to allow them to rise but not so much they are difficult to get out of the pan.

Bake for 15 minutes.

Let cool completely to get them to look like mine (With glazed doughnuts, you glaze while they are still warm, but with these you should do it once they are cooled).

Be sure to add the sprinkles before the icing sets.

Ingredients




  • 2
    cups
    all-purpose flour


  • 1 1⁄2
    cups
    sugar


  • 2
    teaspoons
    baking powder


  • 1
    teaspoon
    salt


  • 1
    extra-large egg
    lightly beaten


  • 1 1⁄4
    cups
    whole milk


  • 2
    tablespoons
    butter
    melted


  • 2
    teaspoons
    vanilla



For the icing:



  • 2
    cups
    powdered sugar


  • 2
    tablespoons
    melted butter


  • 1
    teaspoon
    vanilla


  • 2-4
    Tablespoons
    milk


  • sprinkles of your choice to decorate
    optional




Instructions




  1. Preheat the oven to 350F/175C degrees. Grease 2 doughnut pans well.




  2. Into a large bowl, sift together the flour, sugar, baking powder, and salt.




  3. In a small bowl, whisk together the egg, milk, melted butter, and vanilla.




  4. Stir the wet mixture into the dry ingredients until just combined.




  5. Spoon the batter into the baking pans, filling each one a little more than three-quarters full.




  6. Bake for 15-17 minutes, until a cake tester comes out clean.




  7. Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan and transfer to a rack to completely cool.




  8. Place baking paper under wire racks to catch the excess icing.





For the icing:



  1. Prepare by mixing the sugar, butter and vanilla together in a bowl and then add the milk one tablespoon at a time until the desired consistency is reached (I like mine fairly thick).




  2. Dip the cooled doughnuts into the icing one at a time covering half the doughnuts then place on the cooling wracks.




  3. Add the sprinkles before the icing sets.




  4. Leave on cooling rack to completely set the icing before serving.
